I love a good summer sausage. Pair it with some cheese and crackers and you have a great snack! It can be expensive though and it can also be pretty high in fat and calories. Fat isn’t a bad thing but I do watch my calorie intake and try to balance my fat/carb/protein intake. With that in mind, I wanted to try and make a slightly lower calorie version of this tasty snack. Partly so I could eat more of it at one time.
It turned out to be pretty easy. I looked at a number of different recipes online and pulled some different ideas together to come up with my own version. It ended up being pretty tasty. My next attempt will be to add in some heat.
Ingredients
- 2# lean ground beef (90/10)
- 1# lean ground turkey (93/7)
- 3 tbsp quick cure salt
- 1 tbsp dried basil
- 1 tsp ground pepper
- 1 tsp chili powder
- 1.5 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp mustard powder
TLDR
- Mix all dry ingredients together in a bowl and set aside
- Mix beef & turkey together in a large bowl
- Mix in the dry ingredients that had been set aside
- Refrigerate for 12 hours
- Roll into logs and make sure the diameter is what you want
- Setup smoker to smoke 235ยฐ
- Smoke logs for around 2.5 hours, making sure internal temp is 170ยฐ
- Allow to cool
- Slice and eat
