I made this very similar to the Pizza Fatty, just with some different ingredients (hash browns & veggies) and also went for the bacon weave vs. the basic bacon wrap.

Start by making some hash browns
- These can be homemade or store bought / frozen, whatever you want here
- While those are cooking, sautรฉ up some onions & peppers
- Next, let the has browns and veggies cool
- While they cool, make your bacon weave (aka the bacon blanket)
- Add some pork rub to both sides of the weave
- Put around 10-12 oz of sausage into a quart size ziplock bag
- Flatten the sausage into an even layer & shape
- Cut open the back and put the sausage on top of the bacon weave
- Add a layer of shredded cheese on top of the sausage
- Add your hash browns & veggies
- Roll it all up
- Smoke for around 3 hours at 225ยฐ-235ยฐ
- Internal temp of sausage should be at least 160ยฐ
- Let cool for 5-10 minutes
- Slice and eat!
